Grilled Langoustine with Sauce Chien

Ingredients
Langoustine
- 2 langoustines
- 2 lemons
- Oil
- Salt and pepper
Sauce chien
- 3 green onions
- 2 shallots
- 1 onion
- 1 lemon
- 2 garlic cloves
- Parsley
- Chili pepper
- Vinegar
- 15 cl oil
- Salt and pepper
Preparation
- Cut the langoustines in half lengthwise.
- Mix the lemon juice with a bit of oil and spread it over the meat of the langoustines. Season with salt and pepper.
- Grill the langoustines, starting with the shell side down and then turning them over.
- While the langoustines are on the grill, make the sauce chien: Mince the green onions, shallots, onion, parsley, and a small piece of the chili pepper.
- Place the minced ingredients in a bowl.
- Add the lemon juice, salt, pepper, vinegar, and oil.
- Stir to combine, then pour in a glass of boiling water and let the sauce infuse.
