Shrimp Accras

Ingredients


  • 200 g flour
  • 500 g unpeeled shrimp
  • Small bunch of chives
  • Sprig of parsley
  • Habanero pepper (optional – about 1/4)
  • 1 packet baking powder
  • 1 garlic clove
  • 10 cl oil
  • Salt and pepper
  • Oil for frying

Preparation


  • Mince the herbs. Peel and chop the shrimp.
  • In a large bowl, mix the flour, 20 cl of water, herbs, and habanero until all ingredients are incorporated. Mix in the shrimp and the baking powder. Let rest for 30 minutes.
  • Heat the oil. Once it’s hot, add tablespoonfuls of the batter. When the accras turn golden, remove them from the oil and place them on a sheet of paper towel to drain.
  • Serve hot. It’s best to cook the accras immediately before serving so that they stay crispy.
