Grilled Langoustine with Sauce Chien

  • 2 langoustines
  • 2 lemons
  • Oil
  • Salt and pepper

Sauce chien

  • 3 green onions
  • 2 shallots
  • 1 onion
  • 1 lemon
  • 2 garlic cloves
  • Parsley
  • Chili pepper
  • Vinegar
  • 15 cl oil
  • Salt and pepper


  • Cut the langoustines in half lengthwise.
  • Mix the lemon juice with a bit of oil and spread it over the meat of the langoustines. Season with salt and pepper.
  • Grill the langoustines, starting with the shell side down and then turning them over.
  • While the langoustines are on the grill, make the sauce chien: Mince the green onions, shallots, onion, parsley, and a small piece of the chili pepper.
  • Place the minced ingredients in a bowl.
  • Add the lemon juice, salt, pepper, vinegar, and oil.
  • Stir to combine, then pour in a glass of boiling water and let the sauce infuse.
