Shrimp Accras

Ingredients
- 200 g flour
- 500 g unpeeled shrimp
- Small bunch of chives
- Sprig of parsley
- Habanero pepper (optional – about 1/4)
- 1 packet baking powder
- 1 garlic clove
- 10 cl oil
- Salt and pepper
- Oil for frying
Preparation
- Mince the herbs. Peel and chop the shrimp.
- In a large bowl, mix the flour, 20 cl of water, herbs, and habanero until all ingredients are incorporated. Mix in the shrimp and the baking powder. Let rest for 30 minutes.
- Heat the oil. Once it’s hot, add tablespoonfuls of the batter. When the accras turn golden, remove them from the oil and place them on a sheet of paper towel to drain.
- Serve hot. It’s best to cook the accras immediately before serving so that they stay crispy.
