Throughout Festival Martinique Gourmande, Projet Pilote offers a cocktail inspired by the flavours of Martinique.
La Balançoire du diamant
- 2 oz of Trois Rivières Cuvée de l’Océan rum
- Passion fruit mousse
- Homemade coconut and cinnamon liqueur
- Vanilla spray tincture
- Lime
- Saline solution
- Banana oleo sacharum (syrup made from banana peels)
- Ginger and bondamanjak pepper hydrolate (homemade distillate made from water)

Projet Pilote is a friendly place for lovers of spirits, beer and wine. This is the only bar in Quebec where it is possible to drink spirits made on site. Menu with fresh produce from the roof garden.
